From my book ‘British Cheese Cookery’ (available through this website or Amazon), this is not a recipe, but a surprising and very tasty suggestion. It is advised to keep a small piece of blue cheese in the freezer permanently so that you can produce this taste sensation at a moment’s notice.
Ingredients
- Small piece of any blue cheese
Method
- Place a small piece of the chosen blue cheese in the freezer, wrapped in waxed paper until it is totally frozen. This is ideally done a day in advance.
- Remove the frozen cheese and using a very fine grater or a microplane, grate the cheese as a dust over a plate of charcuterie as a seasoning.
- NB – this works particularly well with stronger flavoured charcuterie such as Bresaola (air-dried beef, Finocchiona (fennel salami) or Spianate Calabrese (spicy salami).
