- Notes : The first cheesemaker in Northamptonshire with this being Northampton's first ever cheese. Gary Bradshaw started as a hobby in 2009. Milk comes from a Jersey herd in nearby Brackley. This started as a Wensleydale recipe but has a lower acidity. It is cheddared but the curds are stacked high to retain the fat content. Described by its maker as a Modern English Territorial.
