  • Notes : Carolyn Fairburn already had her own goats and started making cheese at Thornby Moor House in 1979, with her first cheese being Allerdale. This was followed in 1982 with this cow's milk version, Cumberland Farmhouse. Her grandparents and parents had farmed in Suffolk and her cheesemaking knowledge came from watching them and experimentation in her own kitchen, an entirely self-taught cheesemaker. Dairy Shorthorn milk is sourced from a nearby farm at Parton Hall, Micklethwaite.
